Sunday morning brunchy-brunch—my absolute FAVE meal of the week. You can make anything (and should, in fact, make everything). This morning, I gave pop overs a run for their money. The results were not too shabby.
My idiot-proof recipe:
1 cup all-purpose flour
1 cup milk (I, of course, substituted with soy…maybe NOT recommended)
1 tbs butter
4 eggs (always cage-free and organic!)
Pinch of salt
Pop Over pan and Pam Cooking Spray
Whisk thoroughly, so as to remove any lumps, and fill cups halfway (no more or they won’t puff up). Bake at 420 degrees for roughly 30 minutes or until golden brown. Serve with freshly-chopped fruit (or preserves of your choosing) and butter. Ahh-mazing.
